Pineapple salsa – one of my favorite snacks! A treat – both visual and to the palate, this pineapple salsa is just superb. You need 2 cups chopped pineapple, 2 cups bell pepper, diced, 1 tomato, diced, half a cup chopped cilantro, 1/4 cup finely chopped onion, 2 tbsp lime juice, salt and ground black pepper to taste. Mix everything in a bowl. Enjoy. Indulge in a whole wheat taco if you like! I sometimes substitute apples or pears for the pineapple.
