Crisp carrot fries make a yummy, healthy and vegan snack for diabetes. Bake a batch and store airtight and refrigerate for a week.
Cut carrots into thick strips. In a bowl, mix 1/2 tsp each of garlic powder, black pepper turmeric and oil of your choice with 1/4 cup flour. (almond flour is good). Preheat oven. Combine carrots, spices and oil. Place on parchment paper on a baking tray. Cook for 20 minutes then flip over and bake for 10-12 minutes. Enjoy with natural dip or sauce.
